October is here! Pumpkin Parfait Breakfast

FALL! Yesss. Fall is great. Don’t get me wrong, I love the summer more than anything, but the fall is just wonderful. Warm drinks, cozy sweaters and pretty colors? Can’t. go. wrong. The ONLY bad thing about the fall is that it means winter is lurking just around the corner. Ugh. But, might as well live in the moment and enjoy the wonderfulness of the fall so naturally that means time for pumpkin flavored meals!

Pumpkin Parfait | Keep it Real Clean

Ooo, also get ready. This is basically a fall takeover on Keep it Real Clean. I swear over this week it went from humid, warm weather to total fall season…which basically immediately cued the pumpkin cravings. I never was (and still am not) someone that is obsessed with Pumpkin Spice lattes or anything like that, but I do love pumpkin flavored breakfasts made with real pumpkin…not 87 chemicals concocted together to taste like pumpkin. Hello? Why is that necessary? Pumpkin exists. Use it.

Pumpkin Parfait | Keep it Real Clean

In the morning, I am ALL about something quick and easy to grab and bring to work. I love use mason jars to prep and have easy to grab to head out the door. I know. Mason jars are totally trendy, but they are also so perfect for this! We don’t use any plastic dishes containers for health reasons at home (More about this later?), but sometimes glassware can be super pricey! Solution? Mason jars! You can buy a whole case for the price of basically 2 glass dishes. No brainer.
Pumpkin Parfait | Keep it Real Clean

I made this easy peasy Pumpkin Parfait to grab and take on Monday morning for work. I’ll warn you now. People are going to look at you weird when you’re eating this oddly colored jar of food, but jokes on them because its glorious. Also, just give their weird overally processed bagel sandwich an equally odd look and all is well. Balance restored.

Pumpkin Parfait | Keep it Real Clean

So first things first, I pulled out a bunch of ingredients and got stacking. I used

  • 2/3 cup plain yogurt
  • 1 cup of organic pumpkin puree (not pie filling!)
  • 1 tablespoon chia seeds
  • 1 tablespoon walnuts
  • 1/4 cup of granola
  • Cinnamon to your liking! (I did 2 tsp!)
  • 1 tsp Maple syrup

Add all of the ingredients layered in the jar. When you’re ready to eat, stir it  up and eat it up…with pride! 😉
