Happy Tuesday!! Ahh, Tuesday. When I was in college Tuesdays were one of the key nights to eat at the dining hall. Everyone knows how it can be…you go the whole week eating in the dining hall…the same meal for lunch, dinner, etc. I mean, how many meals can you eat cereal for? Three. The answer is three. and snacks if you’re lucky. Tuesday, on the other hand, was the unicorn of the week. The mythical, magical night of the week, when the tides of the steam tables parted, and the menu was filled with TACOS. Girl. Get it. So, every Tuesday at late night (9pm-12am…um, why do they think the Freshmen 15 happens..ding ding!) was Taco Tuesday and Ohhh momma it was good.
I was lucky to have gotten some super fresh tomatoes in our CSA Farmshare from this week and it was basically a sign that we needed to make salsa. It was a sign. And, naturally, it was then a sign that we needed to have Tacos for dinner this week…of course to pay respect to our Alma Mater and plan tacos for dinner tonight, I mean after all…Taco Tuesday is a tradition. On Sunday night, I made some fresh salsa just to prep and be ready to make our tacos on Tuesday night. I mean, you have to know what you’re getting yourself into, right? Right.
We had a pretty busy weekend and were looking ahead to another busy week so meal prep was a no-brainer for this week. Well, meal prep happened and it was getting crazy. Crazy hot. Our kitchen was ON FIRE. Not really, but it was hot. I probably looked like a crazy person to all of my neighbors, but I decided bringing everything outside to prep was the only logical solution to the heat. Obvi. I gathered up all of my ingredients, brought them to the sink, washed them, and then took everything outside. including the food processor. It was hot, ok? But, it also was the best thing to hang out outside, whip up some salsa and avoid the sauna of a kitchen. #preppingproblem. Hope you enjoy the recipe!!
Fresh Summer Salsa
– 2-3 cups of diced tomatoes
– 1/2 onion
– 2 jalapenos (remove the seeds if you like it a little more mild)
– Juice from 1 lime
– 1/2 cup chopped cilantro
– 1 tbsp diced garlic
– Salt & Pepper to taste
– Pinch of cumin
1. Add all ingredients to food processor, Chop for 15-20 seconds or until at preferred smoothness
2. Slather it on your tacos or eat it as a dip!
I think we all deserve some tacos tonight….oh and a beer or two. After all…its summer…and um, Tuesday? Whatever. Drink a beer 😉
