On Sunday, I was revealing in the Sunday feeling of the “calm before the storm”. We spent all day Saturday doing A TON of home projects so Sunday was the clean up and replacement of everything from the work. Oh right, and then time for usual Sunday stuff…like meal prep! I haven’t done a solid meal prep in a while, but I was ready to get it in order this week…but didn’t want to spend the day doing it! Solution? Don’t. I was able to prep all meals and snacks for my 4 day work week and planned our dinners in…wait for it…one hour. Check it out!
So here’s the breakdown…
- Fluffy oatmeal: I mixed steel cut oats with egg whites while they were cooking and OMG. Amazing. Here’s the recipe if you want to try it out! Its like breakfast tapioca, but so much better (since I don’t like tapioca…)
Typically I pack 3 snacks with the idea that one will go along with my lunch entree then one in the afternoon and another if needed for morning or before a workout. Sometimes I don’t eat everything, but I’ve found its so much better to bring myself a healthy option since it saves time and money in the long run…not to mention, I often can’t find something to really eat at the store at work that’s not chocked full of yuck ingredients anyways.
- Shelled Pistachios
- Oranges and blueberries with flax seeds and cinnamon
- Cottage cheese topped with black cherries
- Spinach with a snap peas and turkey burger with Spicy Peanutty Asian dressing
There you have it! A work week of breakfast, lunch and snacks!
As for dinners, I don’t typically prep all parts of dinner since I really enjoy cooking and its actually something that 90% of the time at the end of the day I look forward to doing. Its a nice way to just step back and disconnect from the day and reconnect with being home. Some weeks I will prep a few ingredients, like cooking a few pieces of chicken or chopping veggies, but most nights I can whip up dinner in 15-20 minutes just by using ingredients that aren’t too fussy.
This week I had planned to dig back into my own archives for dinner ideas!
Monday: Chicken tacos but instead of the peach salsa I’m going to sub in some cooked peppers and onions and a quick pico
Tuesday: Peanutty Noodles with veggies as per request from the guy of the house 😉
Wednesday: Honey Salmon from Damn Delicious I’ve made this a few times and it never disappoints!
Thursday: Chili topped with avocado. Yum! I made a triple batch a few weeks ago and I’m so glad I can pull some out to defrost for the end of the week because, let’s be real by the end of the week who wants to cook?
