Happy Wednesday all! So, this is a recap of yesterdays meals. Week 2 of my vegan trial and everything is going swimmingly…minus the fact that I almost ate a cracker yesterday with honey in it. Oh heck no. So here’s the thing, it turns out you can totally still eat typical “favorites”, but still follow a vegan diet, follow healthy food guidelines…oh, and include a few services of fruits and vegetables!
Breakfast: Yesterday morning, I had 2 of my Pumpkin Banana Oatmeal Muffins and 3 clementines. I bought a bag from Trader Joe’s this week only to find out they are literally the size of a ping pong ball. 3 it is! One of my coworkers said, “its not even worth the work to peel them”
Lunch: For lunch, I had 2 leftover slices of some roasted vegetable pizza I had made for dinner on Monday night. The pizza was topped with sauce, mushrooms, fresh garlic, tomatoes, and kale. YUM. I put a little dab (or 12) of sriracha on top. LOVE IT. Whoops. Hence the need for lots of water throughout the day! Ps. I think this author and I would have a major argument on this point, but I do see her point.
Dinner: After coming home from work, I was DRAINED. I was very close to just throwing in the towel and just giving up and going to bed without dinner or just cheating on my vegan diet and eating whatever it was that my fiance would be having…but, then genius struck and I made this awesome quesadillas. I smashed half an avocado onto one tortilla, topped with yellow peppers and tomatoes and then toasted the whole thing. Oh my gosh, seriously competes with cheesy quesadillas.
Snacks: Throughout the day, I snacked on some cashews, snap peas and the remainder of my leftover apple from lunch. I also had brought a Trader Joe’s green juice in, but only had a few sips.
After dinner: Sooo, it turns out chocolate is hard to give up. Like really hard. I went strong for the first 10 day…but on Sunday I was at Trader Joe’s and the Coconut milk ice cream was calling my name. So, I answered. And it was delicious.
