Ever have a leftover in your fridge right on the brink of expiration and you’re desperately racking your brain for something to make? Well…for me, that it was carrots! I had bought shredded carrots for my Easy peasy Vegetable Lo Mein, but I still had quite a bit leftover. Solution? Carrot and Banana muffins! Sorry friends, I seem to be on a muffin binge these days, but I swear this recipe is different than my Oatmeal Banana Muffins.
Happy Sunday! Finally I’m gearing up to go back to work. Yayyy! Last night we went out to a place down the street from our house. It was the first time I had been out in 9 days. Very weird. Oh, btw…we were home by 10 (#wild). This week my weekly mantra is ultimately to Be Mindful. Its so easy to get caught up in the little things so this week I will make a very conscious effort to disconnect from outside stimuli…like instagram and twitter…when I should be
Hi all! Happy Friday! Gosh, today is a much better day, but let’s skip the update for today. 😉 Because not sure about you, but I’m sick and tired…of hearing about being sick and tired. So back to the happy Friday! Since I spent a good portion of the week around my house I was thinking all about some of my favorites that make my home such a nice place to be. From my house to yours, here are my favorites from around the house!
Finally…after 6 days of feeling god-awful…I finally feel a little better. I can’t even imagine how horrible I would feel if I hadn’t been able to get a prescription early on. I also was super diligent about taking medication on a schedule that my doctor had given to me to adhere to which helped keep my fever down. With the exception of a few spotty times throughout the few days I wasn’t feeling too, too unbearable. I did however feel ridiculously bored for a good portion of the day.
Finally, I’m starting to feel a little bit more like myself. Hoping by tomorrow this cough will be gone and I can actually start to breathe at a real rate (Hooray for small victories!!). Throughout this week I’ve been completely of commission for cooking and thankfully my fiance has taken on the cooking duties. Typically, I make dinner every night that we cook at home. My meal planning is actually pretty intense…
Good morning…ugh, kind of. I woke up yesterday morning with a fever of 103.1. Gross! I immediately called my doctor and got an appointment for the afternoon. I was super lucky to be able to get in and get a test to determine if I had just a terrible cold…or something more. Unfortunately, I tested positive for the flu. womp womp. Luckily, I was fortunate to still be in the beginning phase and qualified for Tamiflu which is useful for decreasing symptoms and the duration
Happy Thursday!! So, this recipe will hopefully be perfectly timed considering its Thursday and NO one wants to spend an hour in the kitchen cooking dinner. How about 15 minutes? Not too bad, right?
