Hey all! Happy Thanksgiving Eve! Hope everyone in PA has managed to get home safely in this icky weather. I’m definitely lucky, despite being FROZEN, to be able to walk to and from work on days like today. So glad I washed my boots so I could
splash through the puddles walk to work this morning. We are getting ready to head out for Thanksgiving dinner tomorrow, but I wanted to share with you my pre-thanksgiving eats. I tried to keep things pretty simple today since we’re going away this weekend and the fridge is looking a little empty. I try to use up most fresh produce and dairy products before we head out for a few days. I really would have loved a little bit more fresh produce today, but we’re pretty much scraping the barrel here.
For breakfast, I enjoyed a slowwwww cup of coffee while catching up on emails and checking out the pret-Thanksgiving day sales. As much as I love the holidays, I would say I equally hate preholiday shopping. Boo. Love to give gifts, but oh man. I need Santa’s workshop. in my house. After my coffee, I threw together some yogurt and granola with a few frozen blueberries. I try to shop within season for most produce, but sometimes you just need something that’s a little “extravagant” for the season. I try to always buy organic when possible, and especially if it’s part of the dirty dozen. Sometimes your best bet for the freshest and often most local can be the freezer section! Since I had some leftover berries from my Blueberry Oatmeal Quinoa Bake, I figured I might as well as some more vitamins! I topped my yogurt with the berries and granola and yes, I ate it directly from the container. Hey! Less dishes to wash!
I picked up this yogurt from Whole Foods. I was super excited to find something that was super local. Ronks, PA? 1 hour and 12 minutes from Philadelphia, PA. Not too bad!
After a few patients this morning, I had my almond coconut bar and apple slices. Lunch was sweet potato a little bit of chicken sausage. Glad I prepped my meals over the weekend because I was so NOT in the mood to pack up a lunch this morning. Okay, and in an effort to use of leftovers I mayyy have had a slice of leftover apple pie at lunch that was leftover from a lunch party yesterday. I mean we HAD to to use the leftovers ;-).
Now, I’m just sitting at home and enjoying a little espresso with milk while I put together this post. Our dinner, Honey Chili Baked Salmon is marinating in the fridge and I’m planning to prep a kale salad just to keep dinner nice and light before our big dinner tomorrow night!
