Meals for the Week: Thankful for a 2 day week!

Hi all! Happy Monday! Since I have a pretty physical job and because this was my first half I wasn’t sure how I would feel so I had planned to take today off. Can’t lie, although I was happy to have the day off I actually felt pretty good..minus walking up stairs. those. were. the. worst. I spent the day doing laundry and prepping meals for the week. Silly that that’s how I spend my day off, huh?

Sometimes I just really love having a day to pull myself together, especially with the holiday season starting! Each week, I sit down and jot out my whole schedule, including work commitments, social get-togethers and workouts..then I sprinkle in meals! Can’t lie, its always nice when I can cross out one night that I don’t have to worry about whats for dinner. I typically will make 1 dish that can be 3 servings for lunches for the week. I work 4 days a week and I used to always prep 4 days worth, but it seemed like at least once a week there would be something happening at lunch or I would have leftovers from dinner that I could bring and I would end up not using all of the food I had prepped. Lesson learned! Best part of this week? At least 1 dinner is for sure planned for us…Thinking I’ll have turkey on Thursday? 😉

Dinners: Week of 11/24-

Monday: Since I was off today I had planned to make a good dinner, but the fiance wasn’t feeling so hot so I had a little left over sweet potato and a tasting of a blueberry quinoa bake that I was trying out for a work party this week! {Look for the recipe on Wednesday!}

Tuesday: Ever since we got back from Miami we’ve been having some sort of homemade Cuban concoction pretty much every week. How Cuban can it really be when its made by two Americans with Irish heritage? Um, you can imagine, but regardless. We try. This week going for something easy and making open face Cuban sandwiches with a side of sweet plantains.

Wednesday: I should be getting out of work somewhat early on Wednesday and I love to make a meal that requires a little more time during the week if I can. This week I’m planning to make Honey Baked Salmon that was inspired by this recipe, but anyone that knows me knows that I can’t cook things that don’t at least have a slight zing of spice, so it’ll most likely morph into a Honey Baked Chili Salmon. Salmon seems like a safe bet before Thanksgiving! Nothing to fill up our tummys too too much before the big dinner. YUM.

Thursday: I don’t know maybe Turkey :-) I’m in charge of wine this year. So, the menu will be Turkey and wine as far as I’m concerned!

Lunch Meals: I baked a sweet potato, apple chunks, and chicken sausage with a little Cajun seasoning. I also sliced up some apples and with a granola bar on the side I’ll be good for lunches and snacks for Tuesday and Wednesday. Easy peasy!

Breakfast Meals: I chopped up a BUNCH of kale and popped into the freezer along with other frozen produce, such as pineapple, blueberries, and strawberries. Typically, I toss together a smoothie by just grabbing a little of each and adding in milk or yogurt. Boom. Smoothie! I also always have yogurt, homemade granola, eggs and toast on hand in case I’m feeling something different for breakfast. Easy enough to make when short on time. | Keep it Real Clean I find its wayyy easier to have a rough idea of meals for the week rather than coming home and staring at the fridge hoping something will miraculously show its self. Its also such an added bonus that it makes grocery shopping wayyy easier and makes us use up what we have! So many positives, why not go for it? 😉
