Happy Wednesday! Yes, I realize its impossible for my #WIAW What I Ate Wednesday posting to be done before Wednesday has even begun, but what can I say. I’m magic. Okay, just kidding. I decided to once again do a #WIAW Tuesday edition just to keep all of you lovelies up on my happenings because I KNOW you CAN.NOT.WAIT. another 24 hours to hear what I ate in a day, right? This morning started off pretty calm. I woke up feeling actually rested which is not always the norm for the week especially with these dark, cold mornings we’ve been having lately. Although its not always the best waking up earlier than my fiance and tip toeing out of our bedroom I can really appreciate the quiet, calm I have each morning when I drink my coffee and check emails to get myself started for the day ahead. I started this morning with a coffee mixed with a dab of organic creamer. I was fortunate to find one from Lancaster county! Local and organic? Oh gosh, am I a lucky girl or what!?
After checking over some emails, I threw together my Produce Aisle Smoothie and waited a few minutes to blend as to not wake
sleeping beauty my fiance. Once I hear that alarm go off its all fair game and I blend away before adding it to my travel mug and heading out the door. I decided to take my smoothie to work this morning so I could enjoy at my desk while prepping for an evaluation.
Around 10am, hunger struck and it was time for a little something to hold me over until lunch. I had had brought 2 bars, but only had a half a Puffed Quinoa Snack Bars . These things are filing! Just the half easily quelled my hunger without making me too full. Oh, I also CHUGGED a bottle of water. I’ve totally been trying to up my water intake recently. The need for more heat is totally taking a toll on my sinuses and throat.
Lunch, eh. Not my favorite. I had leftover macaroni and cheese. Yup. We made some mac and cheese the other day for lunch and I totally hate throwing away leftovers, but this was not in today. Boring. So naturally, later on I had ice cream cake in a meeting. Um, yum…but whoops. Luckily, I also had an apple later which made me feel slightly better. Good thing, I’m running 13 miles on Sunday
Dinner was easy. I whipped up some easy chicken stirfry. Such an easy staple in our house. Wayyy easy way to use up some veggies, toss in some protein and boom you’re done! For the boy, I’ll add some brown rice (shhh, don’t tell him its brown rice!!) and its plenty filling for him. Here’s my easy peasy stir fry sauce recipe…I actually feel silly writing it since its so simple!
Super Simple Stirfry Sauce
- 1 tablespoon maple syrup
- 2 tablespoons soy sauce
- 1/2 tablespoon sriracha sauce
- 1/2 c. water
1. Stir all together in a warm pan to blend together.
2. Toss in veggies, protein, etc.
Makes about 1 cup of sauce
Overall, a really yummy day! We’re super fortunate to have figured out ways to incorporate healthy eating into our day to day. I swear I used to think it was impossible and now I think it might be easier this way than the opposite. Unfortunately, I haven’t gotten in a run yet since Sunday because of the weather. Hoping to make it out for at 2 short runs before Sunday, but no worries!
