Meal Prep Tip: Homemade Laraballs

Happy Monday! We had quite the busy weekend, but it was soo much fun! Had an amazing surprise birthday party for the boyfriend’s mom…phew glad we can stop hiding that, but so happy it worked so amazingly! Today I wanted to share an awesome recipe I’ve been using to use as a quick, afternoon pickup or breakfast! They are a mix of nuts, dried fruits and coconut. If you’re familiar with Larabars, these are super similar…hence the name..they have the moist, but chewy texture and are super yummy! Try out these yummy Laraballs!

First, grind up 2 cups of cashews. You can also sub in cashew flour if you want to skip this step!

Next, add a 1/2 cup of raisins, and 4-5 dates.

Next, add 1/2 of shredded, unsweetened coconut. I love Bob’s Red Mill Shredded Coconut!

Add in 2 tablespoons of coconut oil and mix everything together. You can grind in a blender or a food processor. I typically use my Ninja food processor.

Next, scoop “batter” and place on a cookie sheet. You may want to put a layer of wax paper to avoid the balls sticking to the pan. Lastly, put the balls into the fridge to all them to harden.

And that’s it! I typically will keep in a tightly sealed container in the fridge. The balls stay fresh for at least 10 days, but I swear they’ll be gone before that! Also, don’t forget…
