CSA Recipes this week!

So, I like to think this week was a pretty successful one for using our CSA veggies! This week our order included: Spring Mix, Bok Choi, Green onions, Green leaf lettuce, and Red leaf lettuce. I used a bunch of ingredients we already had, but all in all we were successful. Here’s a recap of the recipes I put together this week.

Also, all week I had quite a few salads and even used the green onion to make my own dressing. This recipe came directly from Red Earth Farm CSA. Thought you all might like to see! (recipe source: http://www.redearthfarm.org/cms/index.php)

Gil’s Green Onion Dressing

1 bunch of green onions (the whole bunch!)
1/3 cup white balsamic vinegar
1 tsp coarse salt
3 garlic scapes, or crushed garlic to taste
1/3 cup olive oil
Chop onions and scapes in a food processor, add vinegar, and salt and slowly add olive oil.
