Chilled Shrimp and Avocado Salad

Sometimes I’m totally okay with a little rain, especially when its following a few hot days! Recently I was dragging my feet to cook something for dinner since it was sooo hot and I felt like I just couldn’t justify turning on the oven or the stove! Why add the heat? I decided to whip up a cold salad and O.M.G. Love. Hope you enjoy it!

Chilled Shrimp and Avocado Salad

Chilled Shrimp and Avocado Salad

2 cups of cooked shrimp (peeled and deveined)
1 roma tomato (or another kind, this is just my preference!)
1 avocado
1 jalapeno
1/2 orange pepper

1/4 tsp fresh garlic
2 tbsp lime juice
1 tsp olive oil
1 tbsp fresh cilantro

2 cups of spinach (Optional)

1. Dice shrimp, avocado, tomatoes and peppers and mix together in small bowl.
2. Mix together garlic, lime juice, olive oil and cilantro (diced).
3. Toss salad with dressing.
4. Eat as is or top on spinach!
