Oh heyy, remember me? Sorry for the unannounced hiatus… but I swear I have a good reason! So, I was on vacation from work, well, a staycation, but regardless no work for a week. One might argue that I should have been posting more considering I was out of work, but I was really busy! I mean…I went to the beach one day, went to a few happy hours, shopped the farmer’s market, had a few dinners out, hung out with my boyfriend’s family, went shopping…
Here’s our CSA haul from this week! YUM! Arugula, Lettuce, Romaine, Salad Mix, Zucchini, Snap Peas, Herb, and a Curly Parsley plant! Not to mention we also got a dozen fresh eggs
So, I like to think this week was a pretty successful one for using our CSA veggies! This week our order included: Spring Mix, Bok Choi, Green onions, Green leaf lettuce, and Red leaf lettuce. I used a bunch of ingredients we already had, but all in all we were successful. Here’s a recap of the recipes I put together this week.
OHHH man. Not sure if you all are aware, but SUMMER is comingg!!! Totally lovely in so many ways, but also a little daunting…because bikini season is coming! Recently, I signed up for a Beach Body Bootcamp from one of favorite fitness websites, Sweaty and Fit.
Happy Monday! Last week I tried the healthy challenge of ditching the caffeine for the week which actually was very nice and not nearlyyy as difficult as I thought it would be. One thing I learned was that I really enjoy the “routine” of my morning coffee. Typically I wake up when my boyfriend’s alarm goes off and watch the news while drinking a mug of coffee…a little calm before the craziness of my day.
Happy Father’s Day everyone! Hope you all are lucky enough to be able to spend time with your own Papa today! Unfortunately for me, my Dad lives about 250 miles away…Thank goodness for Facetime! Anyways, my Dad spent his day doing exactly what he loves to do…GOLF…which is no surprise, because the man loves golf and he totally deserves to enjoy a day on the green!
Sometimes a girl (or a guy!) just needs some chocolate. I recently made this easy mug cake and O.M.G. I’m in love. Super good, relatively guilt free and makes just enough that you don’t have it lying around tempting you to gobble it all up. No worries though…in case you want to make enough to share I’ve included the ingredients and directions for the “shareable” portion as well.
I finally did it!! After abouttt 2 years of contemplating joining a CSA I finally decided to go for it and join one! I had contemplated back and forth whether it was right for us, and honestly before this year it didn’t make sense anyways. Between moving to a new city, starting a new job, moving again, and again (really, I’m not kidding), it just didn’t make sense until now to join one.
