Kale Salad: The cure to the Sunday Blues

I’m not sure about you, but for me Sundays are such a double edge sword…still that lovely no work, limited obligations feeling of Saturday, but also tainted by Monday morning looming. Its a pretty typical that Sunday around 4pm I get a bad case of the Sunday Blues. In order to curve this recently, I’ve tried to disperse my Sunday obligations throughout the week so that way Sunday doesn’t become a day full of errands.

This week I decided to make a healthy Sunday dinner to start the week on a good foot!

Warm Kale Salad with Sausage and Mushrooms

 Ingredients:

1 bunch of kale
1 jalapeno
2 c. mushrooms
2 sausage (this is enough for one serving, but I added more so the boy could have dinner too!)
lemon
½ tbsp. garlic
1/4c. olive oil
Optional: Shaved parmesan

  1. Rinse a bunch of kale and set aside.

Kale2. Cook sausage. (Pretty basic) Mine took about 10-15 minutes to cook.

3. Saute the mushrooms and jalapenos with ½ serving of olive oil. I cooked for about 8-10 minutes on medium heat.
saute4. Remove mushroom/jalapenos from heat. Place kale into pan and cook with remaining olive oil. Toss in garlic. Cook for 2-3 minutes on low heat. Just enough to heat and mix with garlic.

Mushrooms and kale5. Once heated, plate kale, top with mushroom/jalapenos and squeeze lemon over all. Optional: top with fresh grated parmesan.

Parm lemon6. Once the sausage is cooked, slice up if you’d like to top the salad or keep whole if you’d like on the side! Serve and eat while hot!
