I know its basically a sin for people who “eat clean” to not be overly obsessed with anything and everything sweet potato…I mean based largely on what I see on most social media posts and clean eating cookbooks…well, confession time. I did NOT share this undying, hold it on a pedestal, love for sweet potatoes, until I started to make my own version of these yummy sweet potato fries.
Easy as pie! Sweet potato pie…but not pie…just a fry. Okay, done. Sorry.
- Preheat oven to 450.
- Scrub sweet potato with skin on. (You can peel, but why add the extra step?) Slice into strips (of fry variety).
- Spread out on a baking sheet and spray with your fave cooking spray. I usually use coconut oil. I find spraying a light coating versus shaking in oil makes the fries more crispy versus limp and boring.
- Sprinkle with Cajun season, onion powder and dill.
Variation: For a sweet treat, you can also try sprinkling with cinnamon and nutmeg and top with a little raw honey or ghee
- Bake for 12-18 minutes based on your oven and how well done you like them! I like them CRISPY.
